BioregioKantine: Strategies for more organic-regional products in public catering

In a nutshell

What?

We are researching success factors and barriers for increasing the use of bioregional products in the public catering sector of Baden-Württemberg. We have developed 10 action strategies to establish bioregional value chains between agriculture, processing and canteens.

We have created  a mapping platform to give more visibility to the diversity of actors in Baden-Württemberg who are committed to sustainable public catering and to contribute to their networking.

Why?

A shift toward a more sustainable public catering is seen as a lever for transforming our food system. More bioregional products on the plates in daycare centers, schools and hospitals contribute to the right to healthy and fresh food for all people and strengthen resilience through a regional food supply.

How?

We conducted a systematic literature review of peer-reviewed scientific articles and project reports. In addition, we conducted 15 interviews with stakeholders from canteens, local government, food policy councils and science. We presented the results at a stakeholder workshop in Hohenheim on January 24, 2025. The feedback of this workshop was incorporated into the final results report.
